On the Aubrac plateau in Laguiole, Le Suquet by Maison Bras is far more than a restaurant . It is a way of life, a family legacy rooted in the region for three generations. Michel Bras pioneered a cuisine inspired by nature, showcasing herbs, flowers and vegetables gathered nearby. His legendary Gargouillou, composed of twenty-four vegetables, roots and flowers, has become one of the world's most influential dishes.
Since 2009, his son Sébastien Bras has led the restaurant , honouring his father's legacy while expressing his own culinary vision. In 2017, Sébastien made the rare decision to withdraw the restaurant from the Michelin Guide, a powerful statement of creative freedom.
